After a few nights of challenging sleep and feeling a little run down, I wanted to give my body some extra support without heating up the kitchen. That is when I started making this cold lemon ginger drink.
It is tart, gingery, lightly sweet, and has a touch of pleasant bitterness from the lemon zest, which is my favorite part. I drink it on its own or use it as a refreshing mocktail mixer.
How These Ingredients Support the Immune System
Fresh ginger

Summer Lemon Ginger Elixir Recipe
Servings: Makes 1 quart
Ingredients
- Zest of 1 lemon (Meyer lemons work beautifully)
- Juice of 1 lemon
- 1 lemon sliced
- 2 inches fresh ginger, minced
- 1 quart water
- Honey to taste (about 1 tbsp)
Method
- Add all ingredients to a quart jar and top with hot water.
- Screw the lid on and let sit for 1 hour at room temperature.
- Chill in the fridge for 2 to 3 hours or more.
- Strain and enjoy. Keeps in the fridge for up to 3 days.
